Shiraz was sourced from low yielding vines from selected premium vineyards in the Clare Valley.
The majority of theses vines are hand pruned and hand picked and range from 30 to 40 years of age. Traditional methods of vinification were used, fermentation taking place in small open fermenters and gently processed through a basket press. The wine was aged in small French and American oak casks for two years before final blending, then bottled unfiltered to preserve those unique flavours. Appearance: Intense, inky / crimson red with distinct youthful, purple hues. Nose: Lifted sweet plums and berry fruits. Hints of coffee, chocolate and menthol integrate and complex well with sweet lifted French and American oak flavours.
Palate: Palate is full bodied and flavoured, initial sweet plum and berry fruits in balance with firm tannins and the smooth, warm alcohol finish. Palate has firm acidity with the sweeter oak
flavours providing length and complexity to the lingering palate.
Cellaring potential of at least 10– 15 years.
